    • 1 cup Urad Dal, rinsed

    • ¼ cup Green Moong Dal (optional)

    • Water
  • For the Garnishes: 
    • Finely chopped coriander leaves
    • Chaat masala 
    • Chilli powder  

How to Make Dahi Vada: Simple Steps to Creamy Perfection


  1. Soak the Urad Dal: Rinse the urad dal thoroughly in water until the water runs clear. Soak it in enough water for at least 4-6 hours, or overnight. You can optionally soak ¼ cup moong dal with the urad dal for a slightly different texture.

  2. Grind the Batter: Drain the soaked urad dal and transfer it to a blender or grinder. Add ginger, green chilies, cumin seeds, and asafoetida. Grind to a smooth and fluffy batter, gradually adding water as needed. The batter should be thick enough to hold its shape when forming vadas.

  3. Whisk the Batter: Pour the batter into a large bowl and whisk it vigorously for 3 to 5 minutes. Whipping the batter aerates it, resulting in lighter, fluffier, and more porous vadas. Cover the bowl and let the batter rest for 30 minutes.

  4. Fry the Vadas: Heat oil in a deep pan or kadai over medium heat. You can use a ladle or a normal spoon to scoop out small portions of batter and gently drop them into the oil. Don't overcrowd the pan to prevent the vadas from sticking together. Flip the vadas a few times while frying to ensure they are evenly cooking on all sides. Fry the vadas until golden brown and crispy. Drain excess oil on paper towels.

  5. Soak Vada In Water: Once the vadas have cooled slightly after frying, add them to a bowl of water and let them soak for 15 to 20 minutes.
